So I am going to leave skating for like 8 weeks for business. I was wondering how long it will take me to get back to "normal" after I return.
Any experiences?

My rink closed after I'd skated there for 25 years. Because the closest rink from my house is 200 miles round trip, I was forced into a lifestyle change where I went from skating 3 x week to less than once a month.
The closure was in 2014. Since then I've gotten submersed in property maintenance and landscape projects. My property lends itself to biking, which I do on a BMX freestyle bike. The pedaling motion involved in biking much resembles the stepping motion in skating. Christina Yamaguchi cross trained on a bicycle when off rink.

Eight weeks isn't much. You probably won't even notice, though it is likely you will miss some of the nuances you were working on before you left. I've taken breaks as long as six months due to extended travel. I was back to normal within a week or two, though endurance was pretty bad.
